hello there lovely people! i’m oh so happy to be blogging here today on the tie dye files. i consider kaitlyn’s blog one of my favourite daily reads and i’m honoured to be here {albeit virtually} today! i blog over at cupcakes and kale where i share the vegan eats and vegan treats that i cook up in my kitchen. i do love kale and all of my veggies, but sometimes i girl just needs some sweetness in her life. and sometimes some coffee too. enter coffee crunch bites.

these were inspired by the amazing new cappuccino larabar. instead of bars, these are packaged up into 2-bite balls which are just the right size to satisfy a sweet craving. these are raw little lovelies too {except for the teaspoon of coffee grounds which come from roasted beans}!
filled with raw nuts & sweetened with dates, they’ll not only appease your sweet tooth, but they’ll also tide you over if you’re feeling a bit peckish.
and if one doesn’t cut it? have another! the recipe does make nine after all…

coffee crunch bites
makes 9 balls
1/2 cup raw almonds
1/4 cup raw walnuts
1/4 cup tightly packed dates {about 4 medjools}
1 tsp ground coffee beans
1 tbsp cacao nibs
combine the almonds, walnuts, & dates in a food processor and run until you get a fine crumb that comes together when you pinch it between your fingers. add in the coffee grounds & cacao nibs and pulse to combine. pour the mixture into a bowl and scooping up 1 heaping tablespoon at a time, squeeze the mixture in your hand until it comes together and roll it into a ball. repeat with with the mixture until it’s all rolled into scrumptious coffee crunch bites!
these are wonderful at room temperature {especially at this time of year}, but if you like a chilled treat, they’ll also keep well in the fridge or freezer in a sealed container.

Love the sound of these! I’ve been looking for an afternoon treat like this.
I know this comment is late, but I just had to type a quick “thank you”! Not only myself, but my husband too, will love these without a doubt. I’ve been saving up recipes to have on hand during his deployment, and this will definitely be added.
